This hearty Tuscan White Bean Skillet is everything you want in a weeknight meal—quick, wholesome, and full of flavor. Cannellini beans, kale, sun-dried tomatoes, and artichokes come together in a savory tomato-herb sauce for a comforting dish that’s both nourishing and satisfying. Packed with plant-based protein, fiber, and plenty of veggies, it’s a one-pan dinner you’ll feel good about serving your family. Pair it with warm crusty bread for dipping, and you’ve got a simple meal that tastes like a trip to Italy!

  1. Heat olive oil in a large skillet. Add onions, garlic, and sun-dried tomatoes and cook until onion becomes translucent.
  2. Add drained beans, diced tomatoes, artichoke hearts, and all spices and stir to combine. Cook for a 2-3 minutes minutes, stirring periodically.
  3. Add the chopped spinach and chopped kale and stir to combine (try to cover the greens with the warm bean mixture to help them wilt quickly). Cover and let sit for 2-3 minutes.
  4. Remove lid and stir. Once greens are wilted and tender, it's ready to eat. Enjoy!

Notes

  1. This is amazing served alongside a crusty loaf of sourdough and some herbed olive oil for dipping.
  2. I also like to change it up sometimes and add additional protein, tossing in some rotisserie chicken, pre-cooked shrimp, canned tuna, or my favorite bone broth shredded chicken.
