These Tofu Sofritas Sheet Pan Tacos are a bold, healthy twist on taco night! Inspired by classic sofritas and the ease of sheet pan meals, this recipe swaps out meat for flavorful, protein-packed tofu. Tossed with smoky spices, peppers, and onions, the tofu sofritas roast beautifully on a single pan for a simple, hands-off dinner. The result is a plant-based meal that’s not only satisfying but also nourishing—packed with protein, fiber, and veggies. Perfect for busy weeknights, these tacos prove that eating healthy can be full of flavor and fun!

Instructions

Tofu Sofritas Instructions
  1. Preheat the oven to 400ºF and line 2 baking sheets with parchment paper. Spray with cooking spray. Set aside. (This will get your oven ready for the sheet pan tacos. If you're just making the tofu sofritas mix, you can skip this step).
  2. Over the sink, squeeze the block of tofu with your hands to squeeze out as much excess water as possible (it will start to crumble- that's ok!)
  3. Place into a saucepan.
  4. Make the marinade: Place all of sofritas ingredients (everything but the tofu) into a food processor or blender and process them into a sauce.
  5. Add the sauce to the tofu & stir.
  6. Simmer for 15 minutes on medium heat.
Taco Assembly Instructions
  1. On the prepared baking sheets, lat out tortillas. Evenly distribute the beans over each tortilla (about a heaping tablespoon each).
  2. Spoon about a heaping tablespoon of sofritas on half of each tortilla, and top that half with shredded cheese (or a sprinkle of nutritional yeast for dairy free), if using.
  3. Fold each tortilla in half and spray the top with cooking spray.
  4. Bake tacos for 10 minutes.
  5. Remove tray from oven, flip tacos, spray the other side with cooking spray, and cook for another 10-15 minutes until golden brown. Then remove from oven to cool.
  6. While cooking, prepare the Avocado Crema.
Avocado Crema Instructions
  1. Place all Avocado Crema ingredients in the blender and blend until smooth.
  2. Serve alongside street tacos for dipping.

Notes

  1. These tacos can be frozen, so they are great for pulling out on a busy weeknight! Allow them to cool completely before placing them in a freezer-safe container. To reheat the tacos, preheat the oven to 350ºF and then bake the tacos for 15-20 minutes until thawed.
  2. If tofu isn't your thing, you can make with seasoned taco meat instead.
  3. I like to serve with a simple steamed green veggie, like asparagus or steamed broccoli. The timing works perfectly if you start steaming after you flip your tacos!

This isn’t your heavy, weigh-you-down, fat-bomb chili recipe—it’s a lighter, nourishing, high-fiber version that still brings all the comfort you crave! Made with lean ground turkey, tender cactus (nopales), hearty beans, and fresh spinach, this bowl is both cozy and nourishing. The cactus, one of the richest known sources of soluble fiber, adds a unique texture and helps stabilize blood sugar. And- bonus!- the added fiber the cactus and beans provide help reduce appetite. Perfect for when you want a satisfying meal that feels good for your body, too.

  1. Add 1 Tbsp olive oil to a large stockpot. Add garlic and onion and saute until onion is translucent.
  2. Add the ground turkey and brown until no longer pink (about 5 minutes)
  3. Add the remaining ingredients and stir (drained cactus, full cans of tomatoes and beans, spinach, tomato paste, and all spices)
  4. Simmer on low for at least 30 minutes. Top with shredded cheese, sour cream and sliced green onion, if desired (or a dollop plain greek yogurt & nutritional yeast for dairy-free!)

Notes

  1. Nopales sound exotic but they are easy to find in the Mexican food section at almost any grocery store.
  2. You can also let this simmer on the stove for more than 30 minutes and the flavor improves, but it's nearly as good with the quicker cooking time!
  3. I love to serve this with a green salad and crusty bread, or even over baked potatoes.
