INSTRUCTIONS
  1. Drizzle olive oil in pan and heat over medium heat until hot (about 1 min)
  2. Add leeks and garlic and saute 2-3 minutes. Add the oats and saute for 1 more minute. Add stock gradually (about 1 cup at a time), stirring until mixed completely and starting to absorb before adding remaining broth.
  3. Add the peas, green onions, and all seasonings and stir until combined.
  4. Cover, reduce heat to a simmer, and cook for 5-7 minutes, stirring a few times while cooking. If making as a main dish, use this time to sauté your shrimp or warm up your protein.
  5. Remove from heat. Serve warm. Feel free to add additional mix ins (crumbled bacon, cheese, etc). Top with protein, if using.

Notes

For Serving: I like to scoop into a bowls and top with roasted veggies and some type of protein...shredded chicken, baked white fish, sautéed shrimp.

A few ideas:

  1. A really yummy seasoning to use here is Kinders Woodfired Garlic seasoning on any of these proteins!).
  2. Try with pre-cooked shrimp for a super quick dinner. Just sauté thawed shrimp with a little EVOO, garlic, white wine, lemon juice and dried parsley until heated. The sauté liquid tastes amazing drizzled over top!
  3. Feel free to add more toppings as final garnish (more sliced green onion, shredded cheese, drizzle of hot sauce)
