This salad gives broccoli a smoky, flavor-packed makeover! Roasted until tender and finished under the broiler for that irresistible char, the broccoli is then tossed with chewy sweet dates, crunchy almonds, and nutty parmesan. Every bite balances savory, salty, and sweet while staying crisp even after it sits. A light maple-kissed dressing brings it all together, making this the perfect side dish or make-ahead lunch.

Instructions

  1. Preheat oven to 425.
  2. Add broccoli florets to a sheet tray, spray with avocado oil spray (or EVOO), and season with 1 tsp black pepper and 1 tsp garlic salt.
  3. Roast for 25-30 minutes, depending on desired doneness.
  4. While broccoli is roasting, make the dressing. Combine vinegar, maple syrup, olive oil to a mason jar with a lid and shake to combine.
  5. Once roasting is complete and cooked to your liking, turn on the broiler and broil for 2-3 minutes, depending on your oven (watch carefully so it doesn't burn. You want it slightly charred and crispy, but not burnt!)
  6. Place roasted broccoli in a serving bowl and add the dressing, almonds and chopped dates and toss. Top with shaved parmesan cheese and flakey sea salt.

Notes

You can serve this warm, out of the oven, or chilled. I love this salad cold and think it's even better the next day because the dressing soaks into the broccoli wonderfully... making it a great make-ahead side dish for entertaining!
