This One-Pot Shortcut Cajun Jambalaya is the ultimate weeknight win—hearty, flavorful, and ready without the fuss. Using pre-cooked sausage, shrimp, and rotisserie chicken, it comes together in a fraction of the time with zero extra dirty dishes. Fresh spinach adds a pop of veggies, while the quinoa base delivers a perfect balance of protein, carbs, and fiber. It’s a quick, nourishing meal that’s big on flavor, family-friendly, and makes enough for leftovers that taste just as good the next day.

  1. In a medium pot, heat olive oil over medium heat. Add onion, celery and bell pepper and garlic. Saute until softened.
  2. Add tomatoes, spinach, quinoa, bone broth, water and all remaining spices.
  3. Bring mixture to a boil and reduce to a low simmer, cover until quinoa is cooked, about 15-20 minutes.
  4. While simmering, chop rotisserie chicken into bite sized pieces and slice sausage.
  5. Once quinoa is cooked, fluff with a fork and add in the thawed shrimp, chicken, and sausage. Stir to combine. Cover and let rest for 5-10 minutes to let the protein come to heat.
  6. Season to taste with salt, pepper and cayenne. Serve with sliced green onion. Enjoy!

This isn’t your heavy, weigh-you-down, fat-bomb chili recipe—it’s a lighter, nourishing, high-fiber version that still brings all the comfort you crave! Made with lean ground turkey, tender cactus (nopales), hearty beans, and fresh spinach, this bowl is both cozy and nourishing. The cactus, one of the richest known sources of soluble fiber, adds a unique texture and helps stabilize blood sugar. And- bonus!- the added fiber the cactus and beans provide help reduce appetite. Perfect for when you want a satisfying meal that feels good for your body, too.

  1. Add 1 Tbsp olive oil to a large stockpot. Add garlic and onion and saute until onion is translucent.
  2. Add the ground turkey and brown until no longer pink (about 5 minutes)
  3. Add the remaining ingredients and stir (drained cactus, full cans of tomatoes and beans, spinach, tomato paste, and all spices)
  4. Simmer on low for at least 30 minutes. Top with shredded cheese, sour cream and sliced green onion, if desired (or a dollop plain greek yogurt & nutritional yeast for dairy-free!)

Notes

  1. Nopales sound exotic but they are easy to find in the Mexican food section at almost any grocery store.
  2. You can also let this simmer on the stove for more than 30 minutes and the flavor improves, but it's nearly as good with the quicker cooking time!
  3. I love to serve this with a green salad and crusty bread, or even over baked potatoes.
