  1. Add kale to large salad bowl and drizzle with lemon juice and sprinkle with 1/2 tsp each of salt and pepper. Lightly massage it for 1 minute. This step helps tenderize the greens and will break them down a little so they are easier to digest. (While massaging, meditate on the "prayer while you prepare" prompt below.)
  2. Make the dressing: Add dressing ingredients to a mason jar with a lid and shake until combined.
  3. Pour the dressing on the kale salad and toss well.
  4. Top with pumpkin seeds, raisins, parmesan cheese, and lemon zest to the kale and serve.

  1. You can top with a protein to make this a main dish.
  2. I love serving this for dinner alongside a snack board. Add cut up pita or naan to a charcuterie board. Add a bowl of pre-made, plain hummus but don't stop there! Drizzle the hummus with some evoo and top with the zest of 1 lemon, a sprinkle of crushed red pepper, flakey sea salt and a few turns of fresh-cracked black pepper. It's SO good!
