These Vanilla Bean, High-Protein Sugar Cookies are my lighter, gluten-free take on a classic Christmas favorite—soft, sweet, and full of cozy holiday nostalgia without the heaviness of traditional sugar cookies.
This upgraded version keeps all the buttery, vanilla-bean goodness you love while making room for ingredients that support a healthier, more balanced lifestyle. I swapped half the butter for lactose-free Greek yogurt (hello, protein + lower fat!), used dairy-free butter to make them gentle on the stomach, and replaced traditional sugar with monkfruit sweetener to naturally lower the calories without sacrificing that classic cookie-texture.
The result? A tray of gluten-free, lower-fat, lower-calorie, lactose-friendly Christmas cookies that still feel like a treat—they have a soft, chewy texture and are perfect for decorating with your kiddos!

- Preheat oven to 350F and line a baking sheet with parchment paper.
- Cream the butter, yogurt and sugar with a mixer before adding the protein powder, flour, baking powder, and vanilla bean paste.
- When combined, press into a ball of dough and, using a rolling pin, roll out into a slab about 1/4" thick.
- Use your favorite holiday cookie cutters to cut out shapes and place on the parchment-lined baking sheet.
- Bake for 6-8 minutes. The cookies should be soft in the center and slightly crisp around the edges.
