INSTRUCTIONS
  1. Preheat oven to 350 degrees and grease a 8”x4” loaf pan.
  2. In a large bowl, mix together the bananas, eggs, cottage cheese, maple syrup and vanilla until well combined.
  3. Add in the protein powder, flour, flax baking soda and cinnamon until fully combined.
  4. Pour batter into loaf pan and top with thinly sliced bananas (optional- just looks pretty!) and bake in oven for 45-50 minutes, or until inserted toothpick comes out clean.
  5. Remove from oven, allow to cool, slice & enjoy!

Notes

Notes: The bread will taste better after a few days and is delicious popped into the toaster and topped with nut butter, and some more sliced bananas. Drizzle with honey to make even more decadent!


Variations: Try adding chia seeds, chopped nuts, or sugar free chocolate chips (I like Lily’s brand).
