High Protein “Cottage Cheese” Banana Bread (Dairy and Gluten Free)
This banana bread is a dairy and gluten free, high-protein breakfast or snack dish, perfect for satisfying that sweet tooth! It can also be made with all-purpose flour and regular (dairy) cottage cheese if you don't need the dairy/gluten modifications. Enjoy!

- Preheat oven to 350 degrees and grease a 8”x4” loaf pan.
- In a large bowl, mix together the bananas, eggs, cottage cheese, maple syrup and vanilla until well combined.
- Add in the protein powder, flour, flax baking soda and cinnamon until fully combined.
- Pour batter into loaf pan and top with thinly sliced bananas (optional- just looks pretty!) and bake in oven for 45-50 minutes, or until inserted toothpick comes out clean.
- Remove from oven, allow to cool, slice & enjoy!
Notes
Notes: The bread will taste better after a few days and is delicious popped into the toaster and topped with nut butter, and some more sliced bananas. Drizzle with honey to make even more decadent!
Variations: Try adding chia seeds, chopped nuts, or sugar free chocolate chips (I like Lily’s brand).
