  1. Heat the oven to 425 degrees.
  2. Peel carrots and cut into thirds lengthwise (about 3-4 inch segments). Then cut each segment into quarters or halves so each piece is uniform in size.
  3. In a large bowl add carrots, drizzle with olive oil, and stir to coat.
  4. In a small bowl mix all seasonings and toss over carrots.
  5. Grease a large sheet pan and spread carrots into a single layer.
  6. Cover with foil, and place in the oven for 20 minutes.
  7. Uncover and return to the oven for 15-20 more minutes until edges start to caramelize. Enjoy!
