Ingredients

Instructions

  1. In a medium sized bowl combine olive oil, diced tomato, cannellini beans, garlic, half the basil and parsley, and 1/2 tsp each of salt & pepper. Set aside to marinate while cooking the fish.
  2. Heat olive oil in a frying pan over medium heat.
  3. Dry each tilapia fillet with paper towel and sprinkle both sides with salt and pepper.
  4. Pan-fry each side of the fish until golden brown and fish flakes in the middle of the fillet (about 3 minutes per side). Remove from the pan and set aside.
  5. Add ghee to the skillet to melt.
  6. Add the tomato white bean mixture to the skillet and bring to a simmer.
  7. Add bone broth and simmer for 5 minutes before adding the fish back into the skillet.
  8. Spoon the sauce over top of the fish and top with remaining fresh basil and parsley. Enjoy!
