These Cheesy Green Chicken Enchiladas are the ultimate comfort food made simple. Tender rotisserie chicken is wrapped in soft tortillas, smothered in green enchilada sauce, and baked until the cheese is melted and golden. It’s a one-pan dinner that comes together quickly, making it perfect for busy weeknights. Plus, the leftovers reheat beautifully!

  1. Preheat oven to 350 degrees F. Lightly coat a 9 x 13 baking dish with nonstick spray.
  2. Heat oil in a large skillet over medium heat. Add onion and garlic and saute until translucent. Stir in green chilis, diced chicken, 1 can enchilada sauce, and all spices (oregano, cumin, dried cilantro, salt & pepper) and stir for 2-3 minutes.
  3. To assemble the enchiladas, lay tortilla on a flat surface and spoon about 1/2 cup of the chicken mixture in the center and top with a pinch of shredded cheese. Roll the tortilla and place seam side down onto prepared baking dish. Repeat with remaining tortillas and chicken mixture.
  4. Top enchiladas with remaining can of enchilada sauce and remaining shredded cheese.
  5. Place into oven and bake until warmed, about 15-20 minutes.
