This one-pot meal brings bold Mexican-inspired flavors to the table in the easiest way possible.   1. Add 1 Tbsp olive oil to pot on medium high heat. When hot, add minced garlic, diced onion, and diced bell peppers, chopped spinach, and drained beans. Sautee until soft.
  2. Add dry quinoa and mix to toast.
  3. Add 2 cups water, can of enchilada sauce, and can of diced tomatoes (don't drain) and mix.
  4. Cover pot and set timer for 20 minutes.
  5. When 20 minutes is up, lift lid and add broccoli florets. Cover and keep cooking for 10 more minutes.
  6. Remove from heat. Stir. Scoop into bowls and add your favorite toppings. We like salsa, shredded cheese, avocado, cilantro, green onion, and hot sauce.
