- Add 1 Tbsp olive oil to pot on medium high heat. When hot, add minced garlic, diced onion, and diced bell peppers, chopped spinach, and drained beans. Sautee until soft.
- Add dry quinoa and mix to toast.
- Add 2 cups water, can of enchilada sauce, and can of diced tomatoes (don't drain) and mix.
- Cover pot and set timer for 20 minutes.
- When 20 minutes is up, lift lid and add broccoli florets. Cover and keep cooking for 10 more minutes.
- Remove from heat. Stir. Scoop into bowls and add your favorite toppings. We like salsa, shredded cheese, avocado, cilantro, green onion, and hot sauce.
