Crispy Parmesan Smashed Potatoes with Healthy Garlic Aioli
This side dish is a show-stopper for entertaining—impossibly crispy smashed potatoes enhanced with smoky paprika, a sprinkle of Parmesan, and a rich, garlicky aioli that brings everything together. - Preheat oven to 450ºF.
- Peel garlic gloves and place in a square of aluminum foil, drizzled with olive oil to coat. Wrap and place in oven.
- Place the potatoes in a large pot, and cover with water. Once the water is boiling, set the timer for 15 minutes.
- Drain potatoes and let rest for 10 minutes to allow potatoes to air dry.
- In a small bowl, combine the spices from the potato ingredient list: nutritional yeast, smoked paprika, oregano, garlic powder, onion powder, black pepper, and salt.
- Spray a large baking tray with cooking spray and add potatoes, spaced about 2 inches apart, and spritz potatoes with cooking spray. Rub to coat.
- Use the bottom of a sturdy, flat-bottom cup to gently “smash” each potato down until it is around 1/2-inch thick and sprinkle with spice mixture.
- Remove garlic from oven and add pan of potatoes.
- Roast potatoes at 425 for 25-30 minutes.
- Remove garlic from foil and add to a small serving bowl (you'll serve the aioli in this). Using a fork or back of a spoon, mash the roasted garlic until it becomes a smooth paste.
- Add mayo, yogurt, lemon juice, nutritional yeast, onion powder, garlic salt and pepper, and half of the chopped chives. Mix well to combine.
- Remove potatoes from the oven and sprinkle each one evenly with shredded Parmesan. Place back in the oven for 5 more minutes.
- Transfer potatoes to a platter and garnish with extra chopped chives. Serve with garlic aioli.
