  1. Preheat oven to 375.
  2. Puree beets. Add remaining ingredients, except the chocolate chips, to a medium bowl and mix thoroughly with a hand mixer.
  3. Add chocolate chips and stir to combine. (The batter will be a bit sticky and runny. It will be ok!)
  4. Using a cookie scoop, scoop approximately 2 tablespoon amounts onto a greased baking sheet.
  5. Bake for 10 minutes. Store for up to 3 days in an airtight container.
